Add chia and water to a large bowl. Cover and sit at room temperature for 1 hour.
Add to the jug of your high-powered blender along with banana, lucuma powder, water, dates, vanilla and salt.
Blend until smooth.
Divide equally into 4 bowls. Top with goji berries, cacao nibs, sliced almonds, hemp seeds or fresh fruit.
Notes
Lucuma Powder: is what I used instead of sugar in this recipe. It gives the pudding a light maple flavor. You could replace it with a touch of maple syrup. I have not tested this.
