Corn-free Nachos with Tasty Toppings + Mojito Drops Dessert

I may or may not be on a major Mexican kick right now. I can’t seem to get guacamole + fresh salsa in my tummy fast enough.
In school, we learned quickly that when we didn’t know the answer to a question like, “list 5 foods that have Vitamin E”, or “List 3 foods that support a healthy pregnancy”, 9.5 times out of 10 answering with avocado was a sure thing.

Prepare salsa + guacamole per instructions [I didn’t change a thing about either recipe].
Preheat oven to 375F and brush triangle wrap pieces with olive oil and sprinkle with herbamare. Place on a cookie sheet and bake in the oven for 15-20 minutes, flipping at the 10 minute mark. Be sure to watch these very closely as they can burn. Once complete, remove from oven, sprinkle with a bit more herbamare, and set aside to cool. Meanwhile, place ground meat in a frying pan and fry on medium-high until no longer pink. Dash with crushed chili’s and remove from heat. Place a layer of chips on the bottom of your plate. Top with cheese + meat and serve guacamole + salsa on the side. Enjoy! Watch these very closely as they can burn. I’ve been making these nachos for a couple of weeks and couldn’t be happier with the way they turned out. There’s just some days I don’t want to cook [believe it or not] so this recipe is perfect. All of the ingredients are easy to prep and make for fantastic leftovers!
Since it’s been getting warmer, I’ve been craving after dinner desserts like no other! Anything sweet and chewy is fair game. I’ve had my fair share of Lemon Cashew Drops lately, but I was craving something different last night, something risque. Then I remembered a recipe I created for Lori a couple of weeks ago.
And with that I was off to the kitchen to whip up a batch.
These fruit and nut balls make for a perfect [simple] sunny afternoon snack.
Ingredients
10 medjool dates, pitted
½ cup almonds
½ cup coconut
8 mint leaves
1 tablespoon lime juice
zest of one lime
Instructions
In a food processor, chop almonds until they’re the size of the eraser end of a pencil. Remove from food processor bowl and set aside.
Place remaining ingredients in the food processor and combine until dates are fully mashed [you’ll know when it’s ready when the dates clump together in one large ball] Add almonds back in and pulse quickly, just until incorporated.
Grab a scoop at a time [about a tablespoon size or a bit bigger] and roll into balls. Place completed balls on a freezer safe plate. Repeat with remaining dough. Place balls in the freezer for 5-10 minutes, remove and enjoy!
I like to keep them in the freezer for quick access. I prefer them cold, but they’re just as tasty at room temperature and will hold their form well.
Like I said, I have a race tomorrow. The last one before my half marathon in August.
Jess kindly reminded me a couple of days ago that I still haven’t written a review of the amphiod hydration belt I bought for my first 10k. So without further adieu, let’s get down to business!
I love that there are elastic bands on the outside of the endurance pouch. The elastics can hold energy bars, bricks, or glasses – not ideal, but works when you’re in a pinch.
The endurance pouch can fit my iPhone + a snack.
Versatile spaces. When I run 10km, I use the two 8oz. water bottles, when I run my 1/2 I’ll probably do two 10.5oz. and one 8oz. When I get to marathon, I’ll carry 3 bottles and the SnapPod for snacks!
The belt is a perfect fit. I called the company, gave them my measurements, and they suggested a belt for me.
It’s secured with strong Velcro so you don’t feel like the belt is going to go anywhere when you’re running. It doesn’t bounce up and down, or shift at all.
The band is elastic, so it’s comfortable.
Practically weightless. Doesn’t feel like you’re wearing a belt at all. No word of a lie here. I wear it around my hips and am amazed at how little it bothers me.
Cons
The bottles are a bit challenging to remove from the belt when in motion, but it just takes practice to figure out. From my experience, putting your thumb in the top groove, twisting, drinking, snapping back on is the best approach.
The Velcro on the belt will ruin certain sport tops with snags, so be careful!
Keeping the price in mind, I wouldn’t have ordered this belt had it not been recommended by a friend. But, I needed something, and Amphipod was nice enough to walk me through the process, explain everything in detail, and well, I’m a sucker for good customer service + stellar customer reviews.
All in all, I’m extremely happy with my purchase and would recommend the Amphipod belt for anyone looking for a high quality hydration belt.
