Quick keto meals, ready in 25 minutes or less! I’ve got you covered with options for breakfast, lunch, and dinner.
One of the things I’ve learned about myself and my cooking style: I crave meals that are deliciously nourishing, made from whole foods, and can be thrown together quickly with minimal effort… because life is busy, and making a healthy keto meal shouldn’t add to the craziness.
Keto shopping lists, recipes, and more! Start keto with this FREE 5-step guide.
I'm ready! And, you’ve asked me to do another keto recipe book focused on wholesome un-fancy recipes:
So, when I set out to write my second paperback, it was really important to me to make complete meals with a main dish and sides that were quick and easy. Need a full keto dinner made with real, ingredients, ready in 25 minutes or less? Yep, we can do that. Need that keto dinner to be yummy and satisfying? You got it.
It’s no sweat, the only thing you have to figure out is which meal to start with!
These meals are just a hint of what’s in my newest paperback, The Keto Diet Cookbook.
I haven’t included all of the recipes from the book below… but, here are 2 recipes you can take for a spin:

Alright, let’s jump in!
Make a bunch of my keto Mug Biscuits on page 134, slice them, and freeze them… then this recipe takes just 13 minutes to throw together! This recipe makes a great start to every day: loads of greens from avocado mash and spinach, plus a bright pop of flavor from chimichurri.
Bacon, butternut squash, and bell peppers take a classic breakfast dish to the next level. You can add cheese to this if that’s your thing, or top with my Avocado Lime Dressing (page 84) or Basil Vinaigrette & Marinade (page 88) for extra flavor!
If you’re looking to mix up the typical lettuce wrap, this is going to blow your mind! Ditch the lettuce wrap for an avocado, and pile high with your favorite sammy selections. YUM!
Chocolate + matcha latte for breakfast = the ultimate keto breakfast power couple. I mean, why choose between chocolate and a latte when you can have both and feel satiated for hours?
Switching gears for lunch time… These Salmon Salad Cups are a perfectly light keto lunch for any day of the year! I stock up on canned salmon when it’s on sale and save it for recipes like this one: easy to make and so flavorful.
Really short on time? All you have to do is drain, chop, slice, drizzle, and toss, then boom: a super satisfying, Italian-inspired, keto-friendly dish, ready in minutes.
This salad is the queen of all salads. Maybe you’re thinking, “Leanne, it’s just a salad… what makes this one so special?” The lemon, healthy oils, fresh herbs… the… mint? Mint in a salad? Yes, salads will never be the same for you after you’ve tried this one.
My husband, Kevin, loves, loves lasagna, even more than pizza. Making pans of lasagna isn’t my cup of tea (too much work!), so I started making this super-easy keto lasagna casserole, seasoned with garlic, onion, rosemary, thyme, basil, oregano, salt, red pepper… it’s so delicious, and we just spoon into bowls and eat. There’s more lasagna in Kevin’s life, and I’m not going crazy in the kitchen slicing and layering ingredients and cooking for days on end. Win-win!
The real star of this salad is the dressing, let’s be honest. Lots of spice and heat, acid from lime juice, and a creamy tahini base… just drizzle it over everything, starting with the salad base I created for this recipe!
Who doesn’t love a good sandwich? When there’s a crazy-good sauce all up in there, it’s the best keto lunch a girl could ask for. I love ham and turkey (nitrate-free) but you could really use any of your favorite deli meats, just don’t skimp on the basil mayo, okay?
If keto has you missing a classic BLT, I’ve got great news for you: these BLT-Stuffed Avocados are super delicious, keto-friendly, and the addition of avocado and chicken is just the best. Need more volume? Serve on a bed of lettuce.
Preorder at your favorite bookstore, or via these online outlets: Amazon | Barnes & Noble | Books a Million | Indie Bound | Indigo | Amazon.ca | Walmart
Perfectly cooked salmon, glazed with a sugar-free Asian-inspired sauce, served atop a bed of keto-friendly noodles. If you’ve never tried konjac noodles, this recipe will make a great first impression, or you can swap the noodles out for your favorite spiralized veggies.
Sardines aren’t something many of us gravitate toward when we’re hungry, but these mini burgers might change your mind! This recipe is so good that I made it multiple times while writing the book. It’s my go-to meal when we’re hungry and I have very little time to create something fancy. Even my sardine-hating husband asks for it!
Tender cabbage cooked in beef broth with Mexican style chorizo, bacon, onions, and garlic. This recipe is so simple, but the flavors are out of this world. Want to make it now? Get the recipe.
This salad couldn’t be easier to whip up. And the combination of the almond flour coating, the coconut oil used for frying, and the chipotle mayo dressing makes for one heck of a fat-bomb salad!
If you’re craving a savory snack, this recipe is going to be right up your alley. I could live on tapenade. In fact, while writing this book, I nearly did! Amazing on its own or with celery sticks, pepperoni slices, or pork rinds, it makes the perfect midday snack or light meal.
Onto my favorite part of any cookbook: the sweet stuff. This recipe is so refreshing with just the right amount of sweetness. Plus! No ice cream maker required. You can effortlessly whip up this frozen delight in just 5 minutes. I didn’t want to wait till summer to share this with you — get the recipe for this keto-friendly dessert now!
When I’m in a hurry and need something fatty, this is my go-to fat bomb. It’s easy, the ingredients are commonplace, and it tastes like a melted cinnamon bun!
If you’re craving something sippable, sparkling, and chocolatey, this recipe is all three. Can’t handle egg? Don’t worry, I made this recipe egg-free, but kept the name :)
If you love the taste of vegetables and can’t get enough greenery into your body, this refreshing drink is for you. If you’re not a huge fan of the color green or you can’t have a salad without oodles of dressing, then it’s probably best to pass on this one — hardcore veggie lovers only!
That’s all the previews I’ve got for today, but if you’re hungry, you can try out two recipes before anyone else: get the recipes for Cabbage & Sausage with Bacon and Strawberry Shortcake Coconut Ice!
There’s nothing better than picking up a cookbook and getting excited over all the good meals you’re going to make. Like, “I CAN DO THIS!”
