Blended breakfast pudding that’s high in fiber and has absolutely no added sugars.
I created this Happy Tummy Breakfast Pudding recipe a couple of years ago and loved it so much that I ate it for breakfast for 6 solid months.

I'm ready!The recipe was phenomenal. So delicious. The only thing I didn’t like about it was that it used store-bought yogurt. That stuff can be pretty darn expensive, not to mention hard to find. So, I made this recipe.
My favorite part? It’s grain-free, too. Woo!

This recipe is really simple. Soak, blend, top, eat.
I stored the leftover pudding in the fridge for 2 days and it was fine. I wouldn’t leave it longer than that, though.
Lucuma powder is often used in raw baking to give the item a natural maple-like flavor, but without the sugars found in maple syrup.
It has high levels of carotene, vitamin B and iron. Great for the pregnant ladies out there, too!
Top with whatever you’d like. For mine, it was slivered almonds, cacao nibs and goji berries. My favorite combo.
