I want...

A (healthy) dairy-free, keto eggnog latte made with MCT oil that propels the health of your body and brain, boosting your metabolism and providing steady energy all day through.
Keto eggnog! Better late than never, right? I’ve been drinking these keto lattes for the last couple of months and realized, on Friday, that I hadn’t shared the keto recipe with you. How rude of me, I know.
Keto shopping lists, recipes, and more! Start keto with this FREE 5-step guide.
I'm ready!If you like eggnog, you’re in for a keto treat today. If you detest it, maybe you haven’t tried the right eggnog.
Or, if you’re like, “Leanne, ain’t no way I’m going to drink your eggnog”, I get it. Before you go, scroll down past the keto eggnog action to read about eating raw eggs (daily), it’ll be worth your time, I swear.
There are lots of recipes on the blog that are eggnog themed, none quite like the other. The thing that was missing in my little eggnog collection was keto eggnog lattes. No one can resist an eggnog latte. Or, at least if that no one loves eggnog.
Did you know MCT oil also comes in powdered form? Ya! In its powdered state, it's much easier to use, travel with, and incorporate into your favorite recipes. Plus, if you've experienced digestive issues with MCT oil before, MCT oil powder is a lot gentler on the gut. Check out my favorite brand of MCT oil powder here.
So far, we have…
Light Dairy-free Eggnog combines just a couple of simple ingredients into a daily eggnog drink. {vegan, paleo, low(ish)-carb}
Eggnog Coffee Creamerthat transforms a boring cup of coffee (or tea) into an eggnog latte! {vegan, high-carb, paleo}
Vegan Eggnog Cake, a 5 minute breakfast cake that’s quick and delicious. Replace the quinoa flakes for unsweetened shredded coconut if you want it paleo + low-carb. {vegan, high-carb, grain-free}
Eggnog Smoothie transforms your homemade eggnog into a delicious breakfast treat! {vegan, high-carb, paleo}
Full-Fat Dairy-free Eggnog that’s sweetened with coconut sugar and made from a combination of almond and coconut milk.
And today’s Bulletproof-esque, dairy-free, keto blended coffee is the best of the collection, I think. Why? Because it’s packed with keto-tastic MCTs. Them MCTs know how to bring it. New to the world of using these powerful, keto fats for brain-boosting action? Read my article on MCTs as brain food.
I use this BulletProof Brain Octane MCT oil in all of my keto rocket fuel lattes.
When you read the keto recipe today you’re likely going to question my sanity. Why? Because there’s raw egg in it. When I was vegan, even the thought of eggs; cooked or raw, terrified me.
BUT WAIT! Of all the foods in the land, eggs are one of the healthiest, and they’re oh so keto. Yes, eggs.
They’re rich in…
Omega-3. We learned this week that omega 3 fats are where it’s at.
Cholesterol (that’s a good thing). Congrary to popular belief, dietary cholesterol doesn’t contribute to our cholesterol level. In fact, cholesterol is SO important to our functioning, that every single cell in our bodies has the ability to generate cholesterol.
Vitamin E. It’s a natural antioxidant, allowing our cells and vascular system to thrive. Also great for preventing aging.
Vitamin B. Which is needed for nervous system maintenance. The more stress you have in your life, the more B vitamins you need.
Lecithin. A naturally occurring emulsifying agent that assist the breakdown and assimilation of the keto-friendly fats in the yolk.
The nutrient benefits to eggs is broad, vast, epic, even. I could go on forever about the benefit they could do in everyone’s life. But I think you get the picture, yes?
Eggs cooked are great and perfectly keto, but eggs RAW are better because all of the nutrients and benefits I shared above are kept in tact.
Conventional eggs run the risk of being contaminated. We don’t want bugs from the food we eat, especially when salmonella is concerned.
To avoid contaminated, unsafe eggs, look for…
Organic. Adhering to organic standards, the eggs are less likely to be contaminated and will have higher nutrient quality.
Pasture-raised. There are a lot of marketing hot words with eggs. Things like “free-run”, which could mean that they were free to run indoors with billions of other hens or “free range” which may translate to the hens being allowed to roam for a couple of moments a day. In the end, you’re best off with pasture raised eggs.
Tip. Visit your local farmers market for a selection of potential pasture-raised keto-friendly eggs.
Okay, now for that keto recipe already, yeah?!

If you’re sensitive to coconut, I’ve included a couple of substitution suggestions in the notes of the keto recipe above.
You could use hemp milk in place of coconut milk, if you’d like.
For fats, I use BulletProof Brain Octane MCT oil in my dairy-free keto rocket fuel lattes. This keto-friendly oil is the most powerful for MCT generation, aside from the ketone generating oil blend I shared with you on Thursday (win a bottle of it here).
You could also try adding hemp oil to your blended coffee. If the spices are increased, it tastes pretty good!
Collagen. In coffee! Yes. Read this if you’re new to the concept of collagen supplementation for overall health. I add this grass-fed collagen to my coffee for protein, first thing in the morning.
Add all of the lovely keto ingredients to your blender…
And feast your beautiful eyes on your frothy keto creation.
Look at all the FOAM! Completely keto and no dairy ;)
How do you feel about eating raw eggs? Ready to jump on the crazy awesome wagon with me?
